Herby Tomato & Chickpea Salad with Creamy Hummus
This colourful salad is full of summer’s star ingredients – fresh tomatoes, crisp cucumber and soft herbs, tossed with lemon, sumac and crispy chickpeas. It’s perfect as a side, snack or salad, and packed with nutrients like fibre, protein and antioxidants. We love this served with toasted pittas or flatbreads.

Preheat the oven to 180°C fan / 400°F. Tip the chickpeas onto a large baking tray, drizzle with olive oil and add a pinch of chilli flakes (if using). Roast for ⏱️ 20 minutes until crisp and golden. Set aside to cool.

Meanwhile, toss together the cucumber, tomatoes, spring onion, herbs, garlic, lemon zest and juice, sumac and a generous pinch of flaky sea salt in a large bowl.

To serve, smooth the hummus out onto a large plate or serving platter, then pile the chopped salad on top and finish with a generous drizzle of extra virgin olive oil, the remaining herbs and a pinch of sumac. Delicious with toasted pittas or flatbreads.
