Herby Spring Salad
This is one of our go-to spring salads – fresh, filling and simple to put together. We love the mix of new season potatoes, tender asparagus and beans coated in a creamy tahini sauce. It’s perfect for lunch, picnics or a relaxed supper in the garden.

Place the potatoes in a large saucepan of salted water and bring to the boil. Cook for ⏱️ 15 minutes until tender, adding the asparagus for the final ⏱️ 2 minutes. Drain and refresh under cold water until cool to touch.

Meanwhile, make the dressing. Whisk together all the dressing ingredients in a large salad bowl until combined and season generously.

Tip both the beans into the bowl and toss together. Set aside until the potatoes have finished cooking.

Add the potatoes and asparagus to the bowl, followed by the basil and chives. Toss everything together until combined. Season generously with flaky sea salt and plenty of black pepper. Serve immediately.
