Herby Asparagus Puff Pastry Tart
We always love to see the return of asparagus at Deliciously Ella and this year is no exception – signalling the return of longer, warmer, happier Spring days. This vibrant green tart is delicious hot or cold – perfect for a spring lunch or light supper. For best results, use young tender asparagus spears rather than thick, chunky ones.

Preheat the oven to 200°C fan / 400°F. Add the tofu, nutritional yeast, lemon zest and juice, parsley, chives, a pinch of salt and plenty of black pepper to a high-speed blender, and blitz until smooth.

Gently roll out the pastry, leaving it on the paper it’s rolled up in. Transfer to a shallow baking tray and trim the edges of the paper. Use a sharp knife to score a 4cm border around the edges of the pastry.

Pour the green sauce onto the middle of the pastry and spread out neatly to the edges of the border.

Arrange the asparagus on top and scatter over the peas (if using). Brush the border with olive oil and drizzle some over the asparagus.

Bake for 20—⏱️ 25 minutes until the pastry is crisp and golden. Remove from the oven, sprinkle with sea salt and slice into quarters before serving. Delicious with a peppery watercress and rocket salad.
