Day before serving, prepare Yogurt Cheese: Place medium-size strainer over deep bowl. Line strainer with large coffee filter. In medium-size bowl, combine yogurt, parsley, 1 1/2 teaspoons chives, the sugar, oregano, salt, and pepper, spoon mixture into filter-lined strainer. Cover with plastic wrap and refrigerate ⏱️ 24 hours. Check several times and discard liquid that drips from yogurt. Strainer should not be allowed to touch liquid in bowl or yogurt will not drain.

Prepare Pita Dippers: Heat oven to 400 degrees F. In small bowl, combine cumin, garlic powder, salt, and pepper. Cut each pita into 8 wedges. Separate pita wedges into halves and arrange, baked-side down, on baking sheets. Spray with olive oil, sprinkle with cumin mixture. Bake pita pieces until crisp and golden on edges. Cool Pita Dippers on baking sheets on wire racks.

Stir Yogurt Cheese and spoon into serving dish, sprinkle with remaining 1/2 teaspoon chives. Serve with Pita Dippers.
