Mix the lemon juice, olive oil, Dijon mustard, garlic, thyme, salt and pepper in a bowl.

Toss the onions in the dressing.

Remove the onions from the dressing and roast in a preheated 400F/200C oven until tender and slightly browned, about ⏱️ 30-40 minutes.

Serve drizzling the leftover dressing and the parsley.
