Heat oil in a large skillet over medium high heat.Once hot add in onions, bell peppers, carrots and celery and sauté for ⏱️ 4-5 minutes, or until softened and beginning to caramelize.Add in beef, and cook until browned.

Season with salt, and pepper. Add in ketchup, mustard, molasses, apple cider vinegar, apple cider, Worcestershire sauce, fresh thyme, and oregano. Allow to simmer for ⏱️ 5 minutes or until the mixture is thickened and heated through. Set aside until you are ready to assemble your bowls.

Roasted Sweet Potatoes

Preheat oven to 425°F.Add sweet potatoes, olive oil, salt, pepper, onion powder, garlic powder, and paprika to a medium bowl and toss to combine.Spread onto a sheet pan and roast in the oven for 15 to ⏱️ 20 minutes or until crispy and tender in the middle.

Add grated cabbage, carrot and parsley to a large bowl, set aside.

In a small bowl whisk together greek yogurt, honey, apple cider vinegar, salt, and pepper.

Pour the dressing on top of the cabbage mixture and toss to combine. Set aside until you are ready to assemble.
