Bring a large pot of salted water to a boil. Add your whole wheat pasta and cook it according to the package directions until it is al dente. Drain the water and set the pasta aside for now.

While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add your cubed chicken pieces, sprinkle with paprika, Italian seasoning, salt, and pepper. Cook until browned on all sides and cooked through (⏱️ 6-8 minutes). Remove chicken from the pan or keep it in.

Add the minced garlic to the skillet and cook for about one minute until fragrant. Sprinkle the flour over the garlic and chicken. Stir for a minute to cook out the raw flour taste. Slowly pour in the chicken broth and milk while stirring constantly. Let the mixture simmer until it starts to thicken.

Turn the heat down to low. Stir in the Greek yogurt and freshly grated Parmesan cheese until smooth.

Add the cooked pasta and the fresh baby spinach into the skillet. Toss everything together until the pasta is well coated and the spinach wilts.
