Healthy Fruit Bites
These naturally sweet bites are the perfect partner to an afternoon cuppa. A great baking project with small children, they can easily be made school lunchbox friendly by replacing the peanut butter with sunflower seed or pumpkin seed butter.

Place the ripe banana in a bowl and mash with a fork until smooth. Add all of the remaining ingredients and mix until combined. Set aside to allow the chia seeds to absorb. Line a baking tray with baking parchment and preheat oven to 180°C / 160°C fan / 350°F.

Scoop the mixture into golf ball-sized pieces (about 2 tablespoons per bite), shape into rounds and flatten slightly. As sultanas can easily burn, try to ensure they’re not too exposed on the outside of your bites. Place onto the baking tray (they don’t spread much during baking); the mixture should give you 12 bites. Bake for ⏱️ 20 minutes; then remove from the oven and leave to cool on the baking tray before serving.
