Place a large pot over medium-high heat. Add the olive oil and ground beef and cook for about ⏱️ 5 minutes, breaking the meat into small pieces with a wooden spoon. If the meat appears dry, add a few more drizzles of olive oil.

Add vegetables and sauce

Add the onion, bell pepper and celery and cook ⏱️ 5 minutes more, stirring occasionally. Add the garlic, chili seasoning and a pinch of salt. Stir to combine and cook for one more minute. Add the green chiles, sweet potatoes, tomato sauce, tomato paste, beef broth, water, beans and corn. Stir, then bring to simmer. Simmer, covered, for ⏱️ 20 minutes, stirring occasionally.

Check that the sweet potatoes are tender. Taste and add salt, pepper or additional chili seasoning, if desired. You can also add more water or beef broth if you want to thin it out.
