Preheat oven to 350 degrees. Grease a 9 x 9 pan with non stick cooking spray and set aside.Set aside 1 cup of diced apples and 1/2 cup of the oats. Add the remaining apples, oats, maple syrup, vanilla, cinnamon, baking soda, baking powder, yogurt, applesauce, eggs and coconut oil to a blender.Blend for ⏱️ 30-60 seconds or until the mixture is combined. Remove the blender blade and fold in the oats and diced apple by hand.

Pour the oatmeal mixture into the prepared baking pan.

Bake for ⏱️ 30-35 minutes or until the top looks set and a toothpick comes out mostly clean.

Allow the oatmeal to cool completely before slicing and serving.Store leftovers in the refrigerator for up to a week.
