Preheat your oven to 375°F (190°C). Grease your muffin tin heavily with nonstick cooking spray.

Place thawed hash browns in a clean kitchen towel, wrap tightly, and squeeze out as much excess moisture as possible.

In a large mixing bowl, combine the dried potatoes, hot smoked paprika, chopped rosemary, extra virgin olive oil, kosher salt, and freshly ground black pepper. Stir until well coated.

Divide the seasoned potato mixture evenly among the muffin cups. Press down firmly with fingers or a spoon to create a basket shape, pushing potatoes up the sides.

Bake for 20 to ⏱️ 30 minutes, or until the edges are golden and crispy and potatoes look fully cooked.

Carefully remove the tin from the oven. Crack one egg into each hash brown basket. Season the top of each egg with a little salt and pepper.

Return the tin to the oven and bake for another ⏱️ 15 minutes, or until eggs are cooked to your desired doneness (softer yolk vs. fully set).

Remove from oven and let cool for a minute. Run a small knife around the edges to loosen, then gently lift out. Garnish with chopped chives and serve warm.
