Harissa Sweetcorn Soup
This soup is the perfect recipe to make when you've got limited ingredients in the house. It's thick, creamy and so delicious with the mixture of sweetcorn and spicy harissa. If you don't have harissa, you can add a little more paprika and a teaspoon of chilli powder.

Place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the onions, garlic, carrots and a pinch of salt, and cook for ⏱️ 10 minutes until soft.

Once soft, add the drained sweetcorn and paprika and cook for a further ⏱️ 2 minutes, before adding the harissa paste and stock (mixed with boiling water). Bring to the boil, before reducing to a simmer - leave to cook for ⏱️ 10 minutes.

After ⏱️ 10 minutes, add all of the soup ingredients into a blender or food processor and pulse until smooth - you may want to add a dash of almond milk until you reach the consistency you like best.
