Harissa Sweet Potato Salad
This is such a simple salad to make which makes it perfect for an easy midweek lunch. The harissa and lime juice taste delicious mixed through the roasted paprika sweet potatoes, with the rocket adding a hint of freshness to the whole dish.

Preheat the oven to 200C (390F), fan setting.

Place the chickpeas and sweet potato chunks in a large baking tray and mix with 1 teaspoon of paprika, 1 teaspoon of cumin, a drizzle of olive oil and a large pinch of salt. Mix well and cook for ⏱️ 25-30 minutes until the sweet potatoes become soft.

Once cooked, remove from the oven and spoon in the tahini, lime juice and harissa paste. Mix well to ensure everything is coated, before mixing through the rocket and parsley.
