For the grits: Bring 4 cups water to a boil in a medium saucepan. Whisk in the grits and salt. Reduce the heat to low, cover and cook, stirring occasionally, ⏱️ 30 minutes. Stir in the half-and-half and cook until the grits are tender and creamy, about 20 more minutes.

Add the cream cheese, cheddar cheese, pimientos and mustard and stir until everything is melted together. Season with pepper and remove from the heat.

Meanwhile, for the steak: Combine the cumin, chili powder and garlic powder in a small bowl. Heat a grill pan over medium-high heat. Pat the meat dry and season well with salt and the spice mix.

Brush the butter on the grill pan and grill the meat until well marked, 4 to ⏱️ 5 minutes per side, depending on how you like your steak cooked. Cover and set aside to rest before slicing, about ⏱️ 15 minutes.
