Set up grill for direct cooking and heat to high. Once hot, clean and lightly oil grates with canola oil. Soak seven 12-inch wooden skewers in water for ⏱️ 30 minutes.

Whisk together olive oil, lemon juice, and mustard in a bowl. Season with salt and pepper. Using a Y-shaped peeler, thinly slice squash into 1/8-inch thick ribbons, stopping when you reach seeds. Brush squash with 2 tablespoons dressing, then thread onto skewers. Grill, turning once, until charred, 3 to ⏱️ 4 minutes. Cool completely.

Combine arugula, mint, and remaining dressing in a bowl. Top with feta, chickpeas, tomato, and squash. Serve immediately.
