Peel and dice the mango into small bite-sized pieces and add to a mixing bowl.

Rinse and drain the black beans until the water runs clear; then add to the bowl.

Next, add the diced red onion, lime juice, honey, chopped cilantro, salt and pepper; mix well.

If using an indoor grill pan, first spray a thin layer of cooking spray on the pan while it's heating over medium-high heat. If using an outdoor grill, preheat to 350 degrees F.

Once your surface is hot, add the pork chops, season with salt and pepper and grill for approximately ⏱️ 3-4 minutes per side. (Cooking times will vary depending on your personal preference and thickness, but should be cooked to a minimum internal temperature of 145 degrees F.)

Once the pork chops are cooked you can serve them whole or slice them and place on a serving platter; then top with the mango black bean salsa.
