Slice the pineapple into 1-inch thick rounds and place in a large bowl.

In a small bowl, whisk together the lime juice, coconut rum, agave syrup, and salt. Add the marinade to the pineapple and gently toss to coat. Cover and let marinate for at least ⏱️ 20 minutes and up to ⏱️ 2 hours.

Preheat a grill or grill pan over medium heat. Brush the grill with the olive oil and grill the pineapple, covered, until it has noticeable grill marks but is still firm in texture, about ⏱️ 3 minutes per side. Remove to a serving platter and drizzle with more agave syrup.
