Add the yogurt, feta, lemon zest and honey to a mini food processor; then pulse until smooth.

Preheat the grill pan to medium heat; then add the peach slices and drizzle with a little olive oil.

Grill the peaches, flipping halfway, ⏱️ 3-4 minutes until they are charred. Place the toast rounds on a serving platter, add a dollop of the whipped feta; then top with the peaches.

Repeat for all toast rounds; then drizzle honey on top of each crostini and top with chopped fresh mint as a garnish. Serve immediately.
