Grilled Corn, Black Bean & Salsa Verde Tacos
Grilled corn, garlicky black beans and herby salsa verde make the perfect filling for these delicious tacos. They're fun, flavoursome and great to make on any night of the week. We love to pile the black beans and corn on top of small soft tacos, topped with a drizzle of salsa verde and a sprinkle of coriander.

Start by making the salsa verde. Finely chop the coriander, parsley, basil, garlic and capers. Place in a bowl and mix through the lime juice, a pinch of salt and a good drizzle of olive oil (we used about 5 tablespoons, it should come together to form a sauce-like consistency). Mix well. Cover and place in the fridge until ready to use.

Preheat a grill to medium heat. Brush each corn on the cob with olive oil and sprinkle with salt. Place the corn onto a baking tray and cook for 10–⏱️ 15 minutes until golden on the outside and cooked through. Once cooked, leave to cool slightly, then slice off the kernels.

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the chopped red onion, garlic and a pinch of salt. Mix well and cook for 5–⏱️ 10 minutes until the onion has softened.

Add the tomatoes and paprika. Mix well and cook for another ⏱️ 5 minutes until the tomatoes soften. At this point, add the drained black beans and the lime juice. Mix again and cook for another 5–⏱️ 10 minutes until the black beans turn soft. Then turn the heat down to low until ready to serve.

While the black beans are cooking, warm through the soft tacos (we like to heat them individually in a hot pan).

Once everything is ready, top the tacos with the black bean mixture, the corn kernels, sprinkle with coriander and serve with the salsa verde.
