For the white sauce: Whisk together the mayonnaise, lemon juice, vinegar, mustard, horseradish (if using), brown sugar, Worcestershire sauce, garlic, black pepper, salt, and cayenne in a medium bowl. Reserve ¼ cup of the sauce for brushing the chicken; cover and refrigerate the remaining sauce for serving.

For the chicken: Whisk together the salt, black pepper, paprika, garlic powder, onion powder, and cayenne in a small bowl. Pat the chicken dry and sprinkle liberally on all sides with the spice mixture.

Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Oil the grates.

Place the chicken skin-side down over direct heat. Cover and cook until marked and the chicken easily releases from the grill, 6 to ⏱️ 8 minutes.

Flip the chicken and move to indirect heat (the cooler side of the grill). Cover and cook until an instant-read thermometer inserted into the chicken registers 165˚F, 30 to 40 more minutes, depending on the size of your chicken pieces. During the last ⏱️ 5 minutes of cooking, flip the chicken and brush with the reserved ¼ cup white sauce.

Transfer the chicken to a platter, cover with foil and let rest for at least ⏱️ 10 minutes. Serve with the remaining white sauce.
