Toss 2 large green tomatoes, cut into 1" pieces, 6 oz. blackberries (about 1 cup), 6 oz. blueberries (about 1 cup), 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ tsp. sugar in a large bowl to combine; set aside.

Whisk ½ cup extra-virgin olive oil, ¾ cup apple cider vinegar, 1 Tbsp. honey, 1 tsp. vanilla extract, ¼ tsp. sumac, and remaining ¼ tsp. Diamond Crystal or Morton kosher salt in a small bowl to combine. Pour dressing over reserved tomato mixture and toss to coat. Cover and chill 8–⏱️ 12 hours.
