Green Shakshuka
This green shakshuka is a lovely, savoury brunch recipe with spinach, peas, garlic, fresh coriander and green peppers. Delicious served with a chunky slice of sourdough, a dollop of coconut yoghurt and a crack of black pepper.

Place the frozen peas and spinach in a bowl and cover with boiling water. Leave for ⏱️ 5 minutes to allow the peas to soften and the spinach to wilt.

Once soft, drain and spoon into a powerful blender, along with the rest of the base ingredients. Blend until a smooth mixture forms, adding a dash more almond milk if needed.

At this point, place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the onions and a sprinkling of salt - cook for ⏱️ 5-10 minutes until soft.

Add the sliced peppers and butter beans. Mix well and cook for another ⏱️ 10 minutes until the peppers become soft.

Pour the green sauce over the peppers and butter beans and mix well until everything is coated in the sauce - you may want to add a dash more almond milk if the sauce is too thick. Cook for a few more minutes until everything is heated through.

Mix through a big spoonful of coconut yoghurt and serve with some chopped coriander, and a sprinkle of pepper and chilli flakes on top.
