Green Miso Noodles
These green miso noodles are a quick and simple recipe for a busy day. The creamy green sauce is full of flavour thanks to coriander, cashews, sunflower seeds and miso. We've kept this recipe simple, but you can easily add any veg that you have at home.

Cook the noodles according to packet instructions, adding the edamame beans for the final β±οΈ 5 minutes. Once the noodles are cooked, drain and return to the pan.

Place the cashews in a bowl and cover with boiling water, leave to soak for β±οΈ 10 minutes. After β±οΈ 10 minutes, drain and place into a powerful blender, along with the other sauce ingredients. Pulse until smooth, you may need to add a dash more almond milk if itβs too thick.

To serve warm, stir the sauce into the noodles and cook over medium heat for β±οΈ 5 minutes until steaming. To serve as salad, simply pour the sauce into noodles and toss together.

To serve, divide the noodles between bowls, and scatter over the spring onions, sesame seeds and cucumber.
