: In a small bowl mix together red onion, juice of 1 lime, salt, and pepper. Stir to combine and allow to marinate for at least ⏱️ 10 minutes while you prep the other ingredients. *see note

Place the walnuts and pumpkin seeds in a medium skillet over medium heat and toast the nuts until browned and fragrant about ⏱️ 5 minutes, stirring frequently. Remove from the heat and allow to cool.

In a large bowl combine cubed chicken, celery, diced red onion and liquid, and nuts. Set aside.

Dressing

: In a blender or food processor blend the mayonnaise, sour cream, parsley, cilantro, green onions, garlic cloves, lime juice, salt, and pepper until smooth.

Pour the dressing on top of the chicken mixture and stir to coat.

Serve immediately or cover and refrigerate to allow the flavors to combine.
