Make aioli: In a blender, combine 1/2 cup olive oil, egg, garlic, 2 tablespoons water, lemon juice, and salt. With blender running, gradually add remaining oil, blending until mixture emulsifies to a mayonnaise. (Add a few teaspoons water to thin, if needed.)

In a small bowl, whisk ΒΌ cup aioli with heavy cream. (Refrigerate remaining aioli to use later, atop grilled fish or chicken.)

In a medium bowl, toss beans, mushrooms, torn mint, and garlic cream. Divide among 4 plates and garnish with mint.
