Preheat the oven to 450°F. Lightly grease a rimmed baking sheet. Place potatoes, garlic, and oregano on prepared baking sheet. Season with salt and pepper. Arrange potatoes in a single layer. Pour chicken stock and lemon juice over potatoes.

Bake ⏱️ 25 minutes. Remove from oven, and flip potatoes. Increase temperature to 475°F. Bake, basting with the pan drippings occasionally, until golden brown and crispy, 15 to ⏱️ 20 minutes. Serve garnished with fresh oregano and lemon wedges.
