Greek-Style Baked Tomatoes with Rice & Herbs
These Greek-style stuffed tomatoes are colourful, fresh and full of Mediterranean flavour. Stuffed with fragrant rice, herbs and pine nuts, they’re perfect for serving as part of a salad spread or alongside a barbecue. They also can be prepared ahead of time, making them an ideal when you’re hosting.

Preheat the oven to 180°C / 350°F. Slice the tops off the tomatoes and set aside. Scoop out the pulp using a spoon, discard the seeds and liquid, and roughly chop the rest. Season the insides of the tomatoes and place them upright on a baking tray.

Warm the olive oil in a small saucepan over medium heat. Add the garlic, fennel seeds and chilli flakes (if using). Cook for 2–⏱️ 3 minutes until fragrant and just golden.

Stir in the onion and chopped tomato pulp. Cook for 10–⏱️ 15 minutes until softened and golden.

Remove from the heat and mix in the cooked rice, basil, parsley, capers (if using) and pine nuts.

Spoon the filling into the tomatoes, place the tops back on and drizzle with a little olive oil. Bake for 30–⏱️ 35 minutes, until the tomatoes are tender but still holding their shape. Delicious with a peppery rocket salad and barbequed veggie skewers.
