1. Preheat the oven to 400°F.2. Melt the butter with the onion in a large skillet over medium heat. Cook for 3 to ⏱️ 5 minutes, until softened.3. Add the shaved lamb or skirt steak. Season with paprika, cayenne, salt, and black pepper. Cook for 5 to ⏱️ 8 minutes, until browned. Stir in the parsley, oregano, and dill, then remove from the heat.4. Split the rolls or pitas and fill them with the meat. Top each with feta and a slice of cheese. Place on a baking sheet and bake for about ⏱️ 5 minutes, until the cheese is melted and bubbly.5. Stir the remaining feta into the tzatziki. Toss the cucumbers and tomatoes with a pinch of oregano and dill.8. Add lettuce to each sandwich.
