Gooey Peanut Butter Cookie Dough Bites
These peanut butter cookie dough bites are rich, gooey and completely delicious. The base is made from a blend of soft dates, oats and peanut butter, with the dark chocolate chips adding a great crunch. It’s then topped in a rich chocolate icing made from cacao powder and dates. We love to cut them into little bites and enjoy them throughout the week.

Line a large loaf tin with baking paper.

Make the base by placing the pitted dates, oats, almond milk and peanut butter into a powerful food processor and blend until the mixture comes together to form a thick, sticky mix. At this point, add the dark chocolate and pulse a few times to mix through.

Spoon the batter into a lined loaf pan. Smooth over and press down to ensure everything is even. Place in the fridge to set for at least ⏱️ 1 hour.

While the base is setting, make the topping by placing the dates, maple syrup and cacao powder into a powerful food processor and blending until a thick, sticky mix forms. You may want to add a dash of almond milk if the mixture needs some help to blend.

Remove the base from the fridge and spoon over the topping, smoothing over to cover the whole thing. Place back in the fridge to set for ⏱️ 1 hour.

Once set, cut into equal bites and enjoy.
