Gingerbread Waffles
These gingerbread waffles make a perfect holiday breakfast recipe! Full of warm spices and molasses, they are so festive. Top them with syrup or a simple glaze!

Preheat a waffle iron to the regular setting.

In a large bowl, sift together the flour, brown sugar, ginger, baking powder, cinnamon, baking soda, cloves, nutmeg, and salt. In a medium bowl, whisk together the buttermilk, molasses, vanilla, and egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.

In a separate large bowl, use a whisk (or an electric mixer) to beat the 4 egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.

Scoop the batter into the waffle iron in batches and cook according to the machine directions (lean toward the waffles being deeply golden and crisp!).

If making the glaze, whisk together the powdered sugar with 1 tablespoon of water in a medium bowl. Add more water, 1 teaspoon at a time, until a smooth, pourable consistency is achieved.

Serve the waffles immediately with softened butter, warm syrup or the glaze, sweetened whipped cream (if using), and a dusting of powdered sugar.
