📝 Preparation Steps
1
Prepare the Dough: In a large bowl, combine warm milk, sugar, and yeast. Let it sit for ⏱️ 10 minutes until frothy. Gradually add flour, salt, and oil. Knead for ⏱️ 10-12 minutes until smooth. Cover and let rise in a warm place for ⏱️ 1 hour or until doubled in size.
2
Shape and Bake Bun: Punch down the dough and shape it into one massive, flat round. Place on a baking tray lined with parchment. Brush with egg yolk and sprinkle generously with sesame seeds. Bake at 190°C for ⏱️ 30-35 minutes until deep golden brown.
3
Prepare Meat Mixture: Combine ground beef, minced onions, garlic, and spices. Mix thoroughly by hand to ensure the fat and onions are evenly distributed.
4
Cook the Patty: Shape the meat into one giant disc slightly wider than your bun (it will shrink during cooking). In a large heavy-based pan or on a flat grill over a fire, cook the patty for ⏱️ 12-15 minutes per side until fully cooked.
5
Melt the Cheese: Once the patty is flipped, pile the grated cheese on top. Cover the pan briefly to allow the cheese to melt into a thick layer.
6
Assemble: Slice the giant bun in half. Spread tomato sauce on both sides. Layer with lettuce, the giant cheesy patty, tomatoes, red onions, and cucumbers. Place the top bun and serve by cutting into wedges.
7
Par-fry Potatoes: In a large shallow pan (saj) or wok, melt the beef fat until very hot. Add the whole potatoes and fry until the skins are deep golden and crispy. Remove potatoes and set aside (they will finish cooking later).
8
Sear the Meat: Season the beef cuts with salt and pepper. In the same hot fat, sear the meat on high heat until a brown crust forms on both sides.
9
Sauté Aromatics: Add the sliced onions to the meat. Sprinkle with turmeric. Stir until the onions begin to soften and caramelize.
10
Slow Cook: Return the golden potatoes to the pan. Add the bell peppers and tomatoes on top. Pour in 100 ml of water, cover tightly with a large bowl or lid, and reduce heat to low.
11
Simmer: Let the dish steam for ⏱️ 30-40 minutes. This allows the meat to become tender and the potatoes to finish cooking in the juices.
12
Garnish and Serve: Once the meat is tender and the liquid has reduced to a thick sauce, remove from heat. Sprinkle with a generous amount of fresh cilantro. Serve directly from the saj with fresh flatbread.
