This punchy tonic, sometimes known as “Fire Cider”, is filled with antioxidants and beneficial bacteria, traditionally believed to support immunity and digestion. Simply add all of the ingredients to a sterilised Kilner jar, making sure that everything is submerged in vinegar.

Put the lid on and store in a cool, dark place for at least 5 days (for a stronger flavour leave it for up to 2 weeks).

To decant, strain the liquid through a fine sieve and pour into a sterilised bottle. Store in the fridge for up to 6 months. We love this served with hot water and maple syrup, or as a quick pick-me-up shot.
