Prepare the 4-5 pound beef tenderloin by trimming the fat. Cut it in half and tie the roast so you have 2 tied roasts. Bend the tail inward at the end of the roast so that it is tied in an even thickness.

Preheat the oven to 425 degrees Fahrenheit. Heat a heavy-bottomed skillet to medium-high heat on the stove. Add the 2 tablespoons olive oil to the pan.

Once the olive oil is hot, rub the tenderloin with salt and pepper add them to the pan, and sear each side for ⏱️ 3-4 minutes or until they are golden brown, reduce the heat to medium-low.

Spread half of the butter mixture on the seared tenderloin and place it in a roasting pan, skillet, or baking dish. Bake in the preheated oven for ⏱️ 20-25 minutes until the tenderloins reach 140 degrees Fahrenheit.
