Make fruit purée or prepare fresh purée base for each fruit flavor.

For the core: cook fruit purée with sugar and pectin (if needed), then freeze in small molds.

Heat half the cream and pour over white chocolate to melt. Infuse with zest, herbs, or flavorings as desired.

Add gelatin and combine with the remaining cream and purée. Chill mixture overnight.

Whip mousse base. Pipe into silicone molds halfway. Add frozen fruit core insert, then fill the rest.
