Make the Raw Sugar Syrup

In a kettle or microwave, heat the water until nearly boiling. Add the sugar and stir until it dissolves completely. Raw sugar needs more time to dissolve than granulated sugar. If itβs taking a while, reheat it and resume stirring. Let cool to room temperature before using. Makes approximately 7 ounces.

In a blender, combine rum, lime juice, Raw Sugar Syrup, and mint leaves and add 2 cups of ice. Blend until smooth and divide between two glasses of choice. Lightly tap the mint sprigs against your hand to release their aromatic oils before adding to the glasses.
