Cut the green tomatoes into 1/4-inch-thick slices. Sprinkle both sides with 1 teaspoon of the Creole seasoning. Set aside on a platter or baking sheet.

Place the flour on a rimmed plate. Whisk together the buttermilk, pickle juice, and egg in a shallow bowl. Stir together the cornmeal mix and the remaining 2 1/2 teaspoon Creole seasoning in another shallow bowl.

Coat the tomato slices in flour, brushing off the excess. Dip the floured tomatoes into the buttermilk mixture, letting the excess drain. Then dredge them in the cornmeal mixture, patting to coat. Return the breaded tomato slices to the platter or baking sheet.

Add vegetable oil to a large cast-iron skillet to a depth of 1 inch. Heat over medium-high heat until the oil reaches 375°.

When the oil is hot, fry the tomatoes in batches until golden brown on both sides, 2 to ⏱️ 3 minutes per side, being careful to avoid overcrowding the skillet. Transfer to a wire rack set over a rimmed baking sheet.
