French Toast
The ultimate brunch, this simple French toast recipe hits the spot every single time — especially when served with maple syrup, coconut yoghurt and fresh berries. During cooking, the mixture does look a little grey (from the ground chia seeds) but don’t worry, once pan-fried, the toast turns out beautifully golden.

Place the chia seeds into a powerful blender and blend for a minute to break down into a powder-like consistency.

Make the batter by mixing together the blended chia seeds, maple syrup, almond milk, melted coconut oil, ground cinnamon and vanilla in a large bowl. Leave to one side for at least ⏱️ 10 minutes in order to thicken up.

Once the mixture has firmed up a little, soak each piece of toast until completely coated.

Place a large pan over a medium heat and add some coconut oil. Once melted, scrape off any excess mixture from the bread (we use our hands to do this), before adding 2 slices to the pan. Cook the bread on each side for 2–⏱️ 3 minutes until golden.

Once cooked, remove from the pan and repeat the process with the remaining bread.

Serve with a drizzle of maple syrup, a dollop of coconut yoghurt and some fresh berries on top.
