French Onion Soup
The secret ingredient in this soup is time. When you treat your onions with the love and care they deserve they will reward you with a rich, deep complex flavour. We recommend caramelising them for at least 45 minutes. That may seem long, but once you taste the incredible umami flavour you will not regret a moment of it.

For the soup, heat a tablespoon of olive oil in a large heavy bottomed saucepan. Add the onions, and cook, stirring frequently for ⏱️ 45 minutes. The onions will start to catch and turn the bottom of the pan golden, when this happens add small splashes of water to loosen them and incorporate that deep rich flavour into the soup.

While the onions are cooking, make the béchamel sauce for your cheesy toast. Place the milk, black peppercorns, bay leaf, onion and nutmeg in a small saucepan over medium heat and bring to a gentle simmer. Then turn off the heat and leave to infuse while you begin to make the roux for the sauce.

Now make the roux for the béchamel sauce. Place a small saucepan over medium heat and add the olive oil and flour. Whisk for ⏱️ 1 -2 minutes until thickened, then slowly stream in the infused, warm oat milk, whisking constantly to avoid any lumps. (Stream it in through a sieve so you don't add the onion or bay leaf.) It should thicken but still be loose enough that it falls easily off the back of a spoon. When you are happy with it add the nutritional yeast, mustard and salt to taste.

When the onions have cooked for a full ⏱️ 45 minutes and are reduced and darkened add the vegetable stock and bay leaf. Leave to simmer gently for about ⏱️ 15 minutes while you make the cheesy toast. Season to taste with salt and pepper - although we recommend a generous amount in this instance.

Heat a grill to medium high. Place your two slices of bread in the toaster and once they are done smear them with your béchamel sauce. Then drizzle a small amount of olive oil over each one and a sprinkle of nutritional yeast. Place under the grill until bubbling, about ⏱️ 2-3 minutes.

Ladle some French onion soup into bowls and top with the cheesy bread, garnish with fresh parsley and eat immediately.
