Melt the butter in a large saucepan over medium-low heat, add the onions and cook slowly with the lid on, until golden brown and caramelized, about ⏱️ 2-3 hours, stirring every ⏱️ 15 minutes.

Raise the heat to medium, add the garlic and thyme and cook until fragrant, about a minute.

Add the wine and deglaze the pan.
