Preheat the oven to 350°. Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, for ⏱️ 1 minute. Add the heavy cream, Heluva Good!® French Onion Dip, mustard, and 1/4 teaspoon salt; whisk to combine. Simmer until thickened, stirring constantly, about ⏱️ 3 minutes. Remove from the heat.

Spoon a thin layer of sauce in the bottom of a 2-quart shallow baking dish. Shingle half of the potatoes over the sauce, overlapping slightly. Season with 1/4 teaspoon salt and 1/8 teaspoon pepper. Spoon half of the remaining sauce over the top and sprinkle with half the cheese. Repeat with the remaining potatoes, salt, pepper, sauce, and cheese.

Bake until the potatoes are very tender, the sauce is bubbly, and the cheese is golden, about ⏱️ 1 hour, tenting with foil after the first half hour if the cheese is browning too quickly. Let rest for at least ⏱️ 15 minutes, then sprinkle with the fried onions and parsley and serve.
