Preheat the oven to 450˚F.

Heat 4 tablespoons of the butter in a medium skillet over medium-low heat. Add the onions and season with ½ teaspoon salt and ¼ teaspoon pepper; stir. Cover and cook, stirring once, until the onions are softened and translucent, about ⏱️ 10 minutes. Uncover, increase the heat to medium, and cook, stirring, until very soft and deeply golden, about 15 more minutes.

Add the balsamic vinegar and thyme to the pan and cook until fragrant, about ⏱️ 1 minute. Add the beef broth and cook until the liquid evaporates and the onions are caramelized, about ⏱️ 5 minutes.

Microwave the remaining 4 tablespoons butter in a small bowl until melted. Mix in the garlic powder. Arrange the bread cut-side up on a baking sheet and brush with the garlic butter. Bake until golden and crisp, 10 to ⏱️ 12 minutes.

Divide the caramelized onions among the bread pieces (a heaping ¼ cup per piece). Combine the gruyère and mozzarella in a medium bowl and sprinkle over the onions. Top with the olives and bake until the cheese is bubbly and golden brown, 10 to ⏱️ 15 minutes. Sprinkle with more thyme before serving.
