French Onion Burgers
These French onion burgers are topped with slices of Swiss cheese, caramelized onions, and arugula, and are served on an onion roll for a weeknight dinner.

Heat the butter and vegetable oil in a medium skillet over medium-low heat. Stir in the onions, sugar, ½ teaspoon salt, and ¼ teaspoon pepper. Cover and cook, stirring once, ⏱️ 10 minutes. Uncover, increase the heat to medium, and cook, stirring, until the onions are very soft and deeply golden, about 10 more minutes. Add the wine, thyme, and garlic and cook, stirring, until the liquid evaporates and the onions are caramelized, about 5 more minutes.

Combine the beef, Worcestershire sauce, and remaining 1 teaspoon each salt and pepper in a large bowl. Form the meat into four ¾-inch-thick patties.

Heat a grill or grill pan over medium-high heat. Add the patties, cover, and cook until well marked, 3 to ⏱️ 4 minutes per side for medium doneness. In the last minute of cooking, top each burger with 2 slices of cheese and about 2 tablespoons of caramelized onions and cover for ⏱️ 1 minute to melt.

Spread the mustard on the top and bottom of each bun. Place a burger on each bun bottom; add the arugula and the bun tops.
