Preheat oven to 425ºF. Heat 3 tablespoons oil in a large oven-proof skillet over medium heat. Add garlic and coriander. Cook, stirring often, until garlic is fragrant and coriander seeds are toasted, 1 to ⏱️ 2 minutes. Transfer garlic and coriander to a bowl with a slotted spoon. Reserve oil.

Toss in okra, paprika, and reserved oil on a large rimmed baking sheet. Season with kosher salt and pepper. Roast, tossing once, until okra is golden brown and crisp, 30 to ⏱️ 35 minutes.

Meanwhile, stir together yogurt, lemon juice, and remaining 2 tablespoons oil in a bowl. Season with kosher salt. Spread half of yogurt mixture on bottom of a serving platter and arrange roasted okra on top. Drizzle with remaining yogurt sauce. Serve topped with coriander seeds, garlic chips, peanuts, parsley, Aleppo pepper, and sea salt.
