Prepare custard: One day in advance, in a 4-quart saucepan, add milk, sugar, cornstarch, and salt. Bring to a boil over medium heat, stirring constantly, until thickened and bubbly; remove from heat. In a small bowl, beat egg yolks until frothy, then stir in a small amount of the hot milk mixture. Stir egg yolk mixture back into the remaining milk mixture. Cook and stir ⏱️ 1 minute longer; remove from the heat. Stir in vanilla extract; immediately cover the surface of the custard with plastic wrap. Refrigerate until well chilled.

Prepare fruit filling: In a large bowl, mix honey and orange juice. Add figs and raspberries; toss to coat. Let stand ⏱️ 15 minutes.

Assemble trifle: Cut the cake into 2-inch chunks. Brush bottom of a stemmed glass trifle bowl with some raspberry preserves and top with cake pieces in a single layer. Brush cake with half of the sherry. Brush raspberry preserves on top of the cake layer. Spoon one-third of the custard evenly over the cake layer. Cover custard with half of the fruit, pressing some fig halves against the side of the dish in a decorative pattern. Repeat the process beginning with cake pieces, sherry, jam, custard, and fruit. Smooth remaining custard on top. Cover and refrigerate several hours or overnight.

To serve:In a small bowl, using mixer at high speed, beat heavy cream and honey until peaks form. Spoon whipped cream into a pastry bag fitted with a large tip; pipe on top of the trifle to decorate. Refrigerate trifle until ready to serve.
