Preheat the oven to 425°F. Line a baking sheet with parchment paper.

In a small bowl, combine the garlic, lemon zest, and dill. Spread the mixture onto the block of feta, pressing to coat. Cut the feta into 12 (½-inch-wide) sticks.

Work with 1 phyllo sheet at a time, keeping the remaining sheets covered with a damp towel to prevent drying out. Place a sheet on a clean work surface and lightly brush half of it with melted butter. Fold the sheet in half crosswise to form a 9-by-6-inch rectangle. Brush the edges with more melted butter. Fold each of the long sides over to form ½-inch borders.

Place a feta stick 2 inches up from the bottom edge on one short side. Fold the bottom edge of the phyllo up over the filling, then fold in the left and right sides toward the center. Brush with more melted butter and roll the wrapped feta upward into a snug cylinder and gently press to seal.

Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining phyllo sheets and filling. Brush the tops of the rolls with more melted butter and sprinkle with the sesame seeds.

Bake until golden brown and crisp, 15 to ⏱️ 17 minutes.

Serve the feta rolls with hot honey for dipping.
