Make the hollandaise: Process egg yolks, lemon juice, and 1 tablespoon warm water in a blender until combined. With blender running, drizzle in hot melted butter until sauce is fully combined and smooth, 45 to ⏱️ 60 seconds. Season with salt and cayenne pepper. Cover to keep warm.

Make the eggs Florentine: Place 2 to 3 inches salted water in a Dutch oven or large saucepan and bring to a simmer over medium heat. Meanwhile, heat oil in a medium sauté pan over medium-low heat. Add garlic and cook until fragrant, 1 to ⏱️ 2 minutes. Add spinach and cook, stirring, until wilted, ⏱️ 1 minute. Season with salt and pepper. Cover to keep warm.

Crack one egg into a small bowl, being careful not to break yolk. Gently slide egg into simmering water; repeat with remaining eggs. Cook, swirling water gently to keep whites from separating, until egg whites are just set, 3 to ⏱️ 4 minutes. Transfer to a plate with a slotted spoon.
