Add eggs, eggnog and vanilla to a medium shallow bowl. Whisk to combine.Add in the cubed bread and toss to coat the bread in the egg custard.

Heat a large skillet over medium high heat. Add in butter.Once melted add in the bread and cook for ⏱️ 2 minutes or so on each side. I like to keep them moving so they get golden brown all over.

Combine pumpkin pie spice and sugar in a shallow bowl.Immediately transfer the French toast bites to the spice sugar mixture and toss to coat the bites in the sugar.

Serve immediately with maple syrup for serving, if desired.
