Easy Veggie Lasagne
This recipe is a staple in our house, especially when we’ve got lots of little ones coming over. It’s filling, easy to prep in advance and always a hit; plus, it freezes well.

Heat the oil in a large saucepan and add the onion, celery and carrot. Cover and cook for 8–⏱️ 10 minutes, until softened. Give the vegetables an occasional stir and add a splash of water if it looks like they might catch.

Increase the heat slightly and add the mushrooms. Fry for 5–⏱️ 6 minutes, until the mushrooms have browned and the water has evaporated. Add the garlic, cook for ⏱️ 1 minute, then add the thyme and red wine. Allow the wine to bubble briefly before stirring in the tomato purée, lentils, chopped tomatoes and vegetable stock. Bring to the boil, lower the heat and simmer for 20–⏱️ 25 minutes, until thickened and reduced.

Preheat the oven to 160°C fan / 320°F.

To make the white sauce, heat the oil in a large saucepan. Add the flour and cook, stirring, for 1–⏱️ 2 minutes, until the flour smells biscuity. Remove from the heat and gradually add the milk, stirring constantly, until smooth. Return to the heat, add the bay leaves and nutmeg and continue to stir until the sauce is bubbling and has thickened. Stir in the nutritional yeast.

Check the seasoning in the ragu and white sauce, and remove and discard the thyme stalks and bay leaves.

Spoon ½ the lentil ragu into a large baking dish (about 23 × 30cm / 9 x 12″) and lay over 4 of the lasagne sheets. Top with ½ the white sauce, followed by another layer of lasagne sheets and the final layer of ragu. Lay over the final 4 lasagne sheets and spoon over the remainder of the white sauce, smoothing it over evenly. Bake for 40–⏱️ 45 minutes, until golden brown on top and bubbling. Leave to stand for ⏱️ 5 minutes before cutting into portions.
