Easy Traybake
This is a simple, delicious dinner to make on any day of the week. I love the taste of the spicy harissa mixed through the roasted veggies, but it also tastes delicious with pesto if you prefer.

Preheat the oven to 190C (375F), fan setting.

Chop the carrots in half width ways, then into thin slices. Cut the potatoes into quarters.

Place the carrots and potatoes onto a large baking tray with olive oil, salt and pepper - make sure there’s plenty of space so they’re not sitting on top of each other. Roast for ⏱️ 40-45 minutes, stirring once or twice in this time.

After ⏱️ 40-45 minutes, drain the chickpeas and cut the broccoli into small, bite sized pieces and add them to the tray. Cook for a further ⏱️ 15 minutes.

Remove the tray from the oven and stir through the harissa and spinach, I sometimes add a squeeze of lemon and a drizzle of olive oil too.
