Preheat the oven to 180°C fan / 400°F and place a shallow baking tray in the oven to warm.

Gently warm the milk in a small saucepan set over low heat until steaming. You can also warm the milk in a heatproof bowl in the microwave. Stir in the vinegar and set aside for ⏱️ 30 minutes.

Sift the flours into a large bowl, then add the oats, bicarbonate of soda, salt, nuts, seeds, fennel seeds (if using) and black pepper; stir everything together to combine.

Make a well in the dry ingredients, then gradually pour in the curdled milk, stirring until the mixture comes together into a sticky dough. You don’t want to overwork the dough, so just bring everything together until you can no longer see any dry flour.

Generously dust a clean work surface with wholemeal flour, then turn out the dough and shape it into a rough ball. Remove the baking tray from the oven and dust with flour. Place the dough on the baking tray and use a sharp knife to cut a cross, about two-thirds of the way down. Sprinkle a little more flour and a handful of porridge oats over the top.

Bake in the oven for ⏱️ 30 minutes until deeply golden and the bottom sounds hollow when you tap it. Cool on a wire rack; or if you prefer a softer crust, wrap the bread in a clean tea towel and cool upside down on a wire rack.
